According to their compositional and organoleptic characteristics, the beef cuts in Italy are in turn divided into groups of prime, second and third quality.
The classification is based on the thickness of the muscle mass and on the quantity of fat and other connective tissue present.
MAP – optimum atmosphere
MAP stands for “Modified Atmosphere Packaging”, also known as “Controlled Atmosphere”. It is a specific conservation method that maintains the vivid colour of the meat, protecting it from the harmful effect of external agents. With this technique, the meat is vacuum packed to keep it fresh and its organoleptic characteristics unchanged.
